Why it’s on the route

Café Trois Bagues opened in a Jimbocho basement in 1976 and is now run by Noriko Miwa, daughter of the founder. Aged beans are slowly roasted and hand-poured through a flannel filter, and the menu also covers wine and beer alongside a well-known ham-and-white-sauce gratin toast. A long bar counter, walls lined with cups and saucers, low light and quiet jazz set the mood.
