Worth a detour
Trunk Coffee Lab
Nagoya · Isehiyama, Japan
Why it’s on the route
Trunk Coffee opened in Takaoka in 2014 and helped bring Nordic-style light roasting to a city long known for dark roasts. All of its roasting now happens at this Higashibetsuin lab, on a 5kg Probat for most coffees and a small Stronghold for rare lots such as Panama Geisha. Pour-over is brewed on the Origami dripper the company helped develop, alongside Kalita Wave, AeroPress and espresso; staff member Shoma Ishihara won the 2022 Japan Cup Tasters Championship.
